Chicken & Rocket Meatballs with Tomato Brandy Sauce

A fun twist on traditional meatballs! These are made with ground chicken, bacon, capers, parmesan and rocket (baby arugula). Served with a shallot, brandy tomato sauce and garnished with parmesan. The Potatoes Colcannon would make a perfect side as would the New England Clam & Potato Chowder as a first course. Also available without the bacon, but it's a yummy addition... Freezable.

The Medium size entrée serves 2 to 3 adults very generously, and can serve 4 adults with smaller appetites. There are 4 large meatballs in the Medium.

Serving Instructions

Poke holes in top. Place on baking sheet. Bake at 350° for 18 to 28 min. depending on size. Freezable.
