Green Goddess Chopped Salad with Marinated Tofu
The vegetarian version has the delicious addition of marinated tofu. This salad is packed with all sorts of good things for you: cucumber, spinach, fresh mixed greens, pea shoots, celery, marinated tofu, feta cheese and pea shoots. Pickled red onion and pepitas (pumpkin seeds) are both packed on the side. The Green Goddess dressing has lemon juice, parsley, cilantro, scallions, garlic, and agave nectar to name a few ingredients. NO modifications possible for the dressing.
