Halloumi Cheese with Black Eyed Peas and Vegetables
A fun addition to our vegetarian repertoire with this new entrée. We grill slices of Halloumi cheese (a firm sheep's milk cheese with a mild feta-like tanginess originally from Cyprus) with saffron braised fennel, green beans, cherry tomatoes, and corn tossed with basil and served with smoky black eye peas, all seasoned with a light lemon vinaigrette. Not modifiable. Best not frozen.
