Tofu Pad Thai
We're off to Thailand! This amazing national 'street food' style dish is a stir-fry rice noodle dish with tofu, carrots, shallots and shredded green cabbage, all sauteed in a sweet-savory sauce of tamarind paste, oyster & fish sauces to name a few ingredients. We are not forgetting the final sprinkle of roasted peanuts (packed on the side), bean sprouts, scallions and a lime wedge or two. Freezable.
