Vegetarian Enchiladas with Grilled Tomatillo Salsa Verde

Our corn tortillas are filled with roasted vegetables including zucchini, eggplant, butternut squash and red bell pepper - and Monterey jack cheese, mild chilies, sauteed red onions and garlic. Topped with Monterey Jack and served with the salsa verde on the side. Delicious when combined with our Grilled Mexican Street Corn or Hector's Green Rice. Freezable. Freezable.

Serves 1 adult generously, and can serve 2 adults with smaller appetites. You will have 3 enchiladas.

Perfect for 2 to 3 adults , and can serve 4 adults with smaller appetites. There are 6 enchiladas.

Serving Instructions

Remove salsa if inside. Poke holes in top. Place on baking sheet. Bake at 350° for about 15-20 min. Serve with salsa. On the 8oz (1 cup) salsa, To remove lid, first peel back two LONG strips alongside edge of lid. Freezable.
