Vegetarian Greek Moussaka with Gruyere
Made with layers of baked eggplant, gruyere cheese, and tomato sauce spiced with a touch of cinnamon, and finished with a low-fat béchamel. Available without gruyere upon request. Make it a vegetarian feast by adding a side of the Mashed Butternut Squash and Yukon Gold Potatoes or the Wild and Brown Rice Medley with Orange and Pine Nuts. Freezable.
