Vegetarian Taco Salad with Avocado
The vegetarian version has a colorful mix of avocado (whole on the side), black beans, cheddar cheese, cherry tomatoes, black olives, mild green chilies, and a few scallions. Slice the avocado, and gently toss the salad with the Asada seasoned tortilla strips and the house-made ranch dressing, both of which are packed on the side.
